Simple, Flavourful coconut tomato chutney- a bright and refreshing Indian condiment to use with dosa, chapathi, idli etc. Can be made in 5 minutes flat!
Ingredients
1cup Fresh grated coconut
1large Onion, roughly chopped
2small Deseeded tomatoes, roughly chopped
2cloves Garlic
1green Chilli, deseeded
1tbsp Coconut oil
Pink salt to taste
For the Tempering :
15 Mustard seeds
4 Crushed curry leaves
Instructions
Coarsely grind together all the ingredients.
Add oil on a heated iron tawa and add crushed curry leaves and mustard seeds. As the seeds start sputtering, remove from heat and pour in the chutney mixture.
Enjoy this nutty tangy delicacy with dosas, idli or chapati.
