Mushroom Baby Corn Thai Soup

Baby Organic corn - cups

White mushroom chopped

Red pepper bell
Celery chopped - a handful

Onion chopped

Garlic & ginger - chopped
Baby spinach - a handful

ml
Coconut milk

Olive oil
A pinch of turmeric & Cumin powder
Salt as per taste
Instructions

In a large pot, heat oil & saute the chopped onion, garlic, and ginger.

Add fresh baby corn, celery, red bell pepper, mushrooms, and 1 cup of water , give it a good stir.

Simmer for 15 minutes. Add chopped spinach & coconut milk, stir for another 5-7 mins.

The soup is ready to serve.
