Mushroom Baby Corn Thai Soup

- In a large pot, heat oil & saute the chopped onion, garlic, and ginger.
- Add fresh baby corn, celery, red bell pepper, mushrooms, and 1 cup of water , give it a good stir.
- Simmer for 15 minutes. Add chopped spinach & coconut milk, stir for another 5-7 mins.
- The soup is ready to serve.
